Optimistic Observations: Gourmet Dinner

Today is Wednesday, March 12, 2025.

After a quite productive day at work, I logged off and, for the second day in a row, took Ash for a walk.

oOoOoOoHhH, tWo DaYs In A rOw?

Well, yes. I’d tried getting on a regular schedule with the canine, but the psychotic Iowa weather didn’t know if it wanted to give me two days of pleasant weather in a row.

To put it in other words, I’ve been walking when the temperature is above freezing.

Anyway, I got back and started on dinner. I was going to make egg roll in a bowl, but we’d had egg rolls for lunch so Brandy 86’ed that idea. Instead, I made one of the hundreds of strip steaks we have in the freezer. I set it out, salted it and let it come up to room temperature while I prepped the rest of dinner. When the time came, I seared it off in cast iron on the stove, then, after it had come up to temp, I rested it to finish cooking.

I served it with mashed sweet potato, mixed with milk, butter and maple syrup, and topped with a honey butter I whipped up before anything else. And the veg on the side was green beans I’d par-cooked before sauteeing with some bacon and garlic.

It really was quite delicious, and it, coupled with other meals I’ve successfully pulled off recently, has given me the thrill to cook again.

I saw a short rib ragu recipe on YouTube recently that I think I’m gonna give a whirl, maybe this weekend.

The weather the last couple days has been fantastic, but again, Iowa is in it’s lunacy phase of the year and after an 80° day on Friday, we’re supposed to dip back down to 50° again over the weekend. Sounds like it’ll be a perfect opportunity to try that short rib ragu recipe, eh?
